Ingredients 

Overnight oats

  • 4 cups rolled oats
  • ½ cup chia seeds
  • 4 scoops vanilla protein powder
  • 2 cups vegan yogurt
  • 1 teaspoon vanilla extract
  • Salt pinch
  • ¼ cup stevia
  • 1½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 4 cups soy milk unsweetened

Cooked Apples

  • 6 medium Granny Smith apples peeled, cored, and diced
  • 1½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 3 tablespoons water
  • 2 tablespoons stevia brown sugar
  • 2 tablespoons cornstarch
  • 4 tablespoons water

Instructions

  • Make the oats: In a large bowl, mix the rolled oats, chia seeds, protein powder, cinnamon, and nutmeg.
  • Stir in the vegan yogurt, vanilla, stevia, and enough liquid to reach your desired consistency. Mix well.
  • Cook the apples: Add diced apples, cinnamon, nutmeg, vanilla, water, and stevia brown sugar to a saucepan. Cook over medium heat until the apples soften.
  • Mix the cornstarch with 4 tablespoons of water in a small bowl to make a slurry. Stir it into the cooked apples and cook for another 1–2 minutes, until the mixture thickens.
  • Divide the overnight oat mixture between 8 jars and top with the cooked apples.
  • Cover and refrigerate overnight, or for at least 4 hours, before serving.

Notes

If your oats are too thick after chilling, simply stir in a splash of your favourite milk before serving.
