Ingredients 

  • 10 (300 g) White Tortillas 6" size
  • 1 340g Beyond Meat Plant Based Ground
  • 1 Can (425 g) Black Beans drained and rinsed
  • ½ tsp Garlic Powder, Onion Powder, Paprika, Salt and Black Pepper each
  • 5 Slices Vegan Cheddar Cheese cut in half
  • 2 tbs Avocado Oil for cooking tacos

Toppings

  • ½ Head Iceberg Lettuce shredded
  • 1 small Red Onion sliced
  • 10 Dill Pickles sliced

Big Mac Burger Sauce

  • 10 tbs Vegan Mayo
  • 2 tbs Yellow Mustard
  • 2 tbs Ketchup
  • 2 Dill Pickles minced
  • 1 tbs Pickle Juice
  • ½ tsp Granulated Sugar
  • ½ tsp Garlic Powder, Onion Powder, Paprika, Salt and Black Pepper each

Instructions

  • Make the burger sauce: In a bowl, mix vegan mayo, mustard, ketchup, pickle juice, diced pickles, sugar, salt, pepper, garlic powder, onion powder, and paprika. Set aside.
  • Make the filling: Drain and mash the black beans. Mix with the vegan ground beef, salt, pepper, and garlic powder until well combined.
  • Add to tortillas: Spread a thin, even layer of the filling over one side of each tortilla, pressing it down firmly.
  • Cook: Heat a little avocado oil in a medium skillet over medium heat. Place the tacos filling-side down and cook until the filling is golden and crispy.
  • Flip & add cheese: Flip the tacos and place vegan cheddar on top. Cook until the tortilla is golden and the cheese is melted.
  • Add toppings: Top with shredded lettuce, sliced onion, and pickles.
